
These are great for using up the left over christmas chocolates. I absolutely love ferrero rochers. So I decided to mix them together with another one of my favourite things .. chocolate cupcakes. I didn't even manage to get to try one of these they went so fast. It was so satisfying hearing the crunch of the ferrero richer when biting into the light chocolate cupcake.
What you will need:
Chocolate cake mix packet you can use any cake mix (I wish I had used betty crocker cake mix as the texture and flavour can't be beaten in my opinion.) 2 eggs, 120 ml of water. Ferrero rochers, icing sugar, margarine, nutella.
Pre-heat the oven to 170.. Pour the cake mix into a bowl with the two eggs and 120ml of water. Mix it all together until the consistency is nice and smooth, no lumps allowed. Pour the cake mixture half way into a baking tray. Then sit the ferrero rochers so they're nestled into the cake mix lightly.. DO NOT cover them or fill the mixture to the top (trust me.)
Place them in the oven for roughly 20 minutes and leave to bake. I always use the timer on my iPhone at this point because I'm terrible at keeping time and will usually get distracted or forget when I put them in. Nobody likes burnt chocolate cake. After letting them to cool they should look something like this.. spot the snug looking ferrero rocher
For icing I used margarine left at room temperature so it's easier to mix, icing sugar and water. Using quite a lot of elbow grease to mix it all together then I added two generous spoonfuls of Nutella to create a perfect blend of chocolate and hazelnut frosting (drool) perfect for ferrero rocher stuffed chocolate cupcakes.
Slather the cupcakes in a generous helping of nutella flavoured frosting..and enjoy.
